I'm trying to figure out if there's enough detail/accuracy for creating a simple threading model, so two parts could screw together. Anyone have any experience with this? Any tried and proven thread sizes?

PS bonus query: anyone know the minimum wall thickness for the "White, Strong & Flexible" material - I didn't see it on the materials page?

The smallest size of details with their current printers is about .5mm, or 0.0196850394 inches.
You should be able to do threading just fine id you keep the threads above .5mm in thickness, and the Strong white flexible is down to .5 also.
