I would like to create a nozzle to shoot out liquid similar to a that found in a spray bottle. What is the minimum hole size that could accomplish this for FUD or detailed plastic? Which would be better (FUD or detailed plastic)? Most spray bottles have an opening around 0.2mm diameter or even smaller. It needs to be only 1-2mm thick.

The minimum clearance for FUD is 0.05mm and the minimum for Detail is 2mm. So that should be the safe size for the diameter of a hole.
