Hello,

what are your opinion about doing bicycle sprocket from shapeways stainless steel. Is it strong enough to work???

Strong enough, maybe.
Accurate enough, probably not.
And the thickness of the teeth needed would probably mean rejection Sad

You'd probably be better off using a water jet cuttting service.
